When you cut into a ripe but don't finish it all at once, it's always frustrating to see the flesh turn brown quickly. Cookbook author, Nicole Keshishian Modic of instagram and website, KaleJunkie, has a simple trick to keep your avocado halves perfectly green for days. Instead of submerging avocados in water, which can risk contamination, Modic recommends storing the avocado in a sealed container with a sliced underneath.
The onion releases sulfur that will then slow down the browning process by preventing oxygen from interacting with the enzymes in the avocado. After three days stored this way in the fridge, Modic's avocado remained "still perfectly green", she said.
She also mentioned that squeezing lemon juice on the avocado can help, but it typically doesn't keep it green for as long as the onion trick.
Storing avocados with the pit alone is also less effective.
One person on Reddit wrote: "Storing avocados with onion in the refrigerator keeps avocado fresh for days. I learned this by accident and found out it's actually a thing."
Another said: "Onions have sulfur, which is what keeps the avocado from interacting with oxygen in the air in the bag and spoiling."
This sulfur reacts with enzymes in the avocado, blocking the oxygen that would normally cause discolouration.
While there might be a subtle onion flavour, it's very mild and works well when you're eating the avocado on toast, guacamole or in salads.
However, you may want to avoid this technique if you're using it for avocado desserts or smoothies.
